Ginger Cookie Delight

After sickness sweeping through our house AGAIN how do I distract myself from the lovely plus 5 degree weather and our original plans to get outside? I BAKE. After the massive pot of chicken veggie soup and hearty Beef Stroganoff I made for suppers this week, I decided to make these very yummy chewy cookies. I know Christmas and the holidays are over but these are one of my boys favorite cookies and he's just not catching a break with this horrible flu season so I wanted to surprise him.

This recipe came from my sister who got it off her sister in law so if it's a secret recipe or family tradition that shouldn't be passed along, well I am! Haha! It needs to be shared ladies! They are easy to make take 8 minutes in the oven and make the house smell like Christmas again and well with us missing it, I am just fine and dandy with that! Just another warning, they are also highly addictive.

Ingredients:

1.5 cups butter

2 cups sugar

2 eggs

Qtr cup molasses

4 cups flour

2 tsp baking soda

2 tsp cinnamon

Directions: Cream butter, sugar, eggs and molasses. Sift flour, ginger, baking soda and cinnamon in separate bowl. mix dry into wet. Spoon into balls then flatten (with ramekin dish or bottom of cup) so they are 1.5 cm thick. Give adequate spacing on a greased baking tray and bake for 8 minutes at 350F. Notes: This mix doesn't work to do cookie cutter shapes as its too soft.

Now just try not eat them all! To stop myself from doing this, I froze them and also packed some up for the rest of the family!
