Tis the Season for Sweets: Date Balls!

With the holidays coming up I wanted to get a head start on some festive baking because last year I got way too busy rushing around and wasn't as productive. I like quick and easy recipes that don't require too much work!

This summer I was introduced to some recipes on the Paleo diet and I've become a big fan. With every recipe I have a tendency to add or change it a little to suit me and my family so with these I've added a little peanut butter because my son loves this version! If you want it to be strictly Paleo you can substitute and use almond butter which I usually do or one of the other nut butters (cashew, almond, coconut) or leave it out altogether. I'm slowly introducing healthier options and hoping my kids love them!

These are an excellent natural sweet treat that gives you that much needed burst of energy, great with a cuppa or even great to throw in a baggie and take on the go. Both my kids love them. I store and serve them straight from the freezer as I like them less gooey and soft and I'm adding them to the list of festive holiday treats this year!

All you need:

1 tbsp Coconut Oil

2 cups of pitted Medjool Dates

1 cup shredded unsweetened coconut

half cup peanut butter or almond butter

1 cup chopped walnuts

Step 1: Warm coconut oil in a pan on medium heat.

Step 2: Add dates and stir until softened into a mixture. Take off heat.

Step 3: Add peanut butter and stir up until mixed together.

Step 4: Add chopped walnuts (you can also grind or blend the walnuts if you prefer)

Step 5: Roll into balls, cover with coconut and store in freezer.

So easy! I even get my boy to help me. I've seen a number of different versions of this recipe, some people add cocoa and vanilla essence which you can do too. This is my version.
